on the bar cart {blueberry mojito royale}

We accidentally made this with the wrong rum last weekend, but they say that all the best things are discoveries made by accident, don’t they?  It tastes all the better for the little kick of the spices I think, and the amber tinge of the dark rum gives a really rich colour to the drink as well as the ombre tint that makes it even prettier to look at.

I made this over on Instastories last Saturday, but I thought I’d record the recipe here too, in case you’d like to try it this weekend!

 

 

 

Blueberry Mojito Royale

 

You will need:

1/3 cup blueberries (plus extra to garnish)

fresh mint leaves

the juice of half a lime

2 tsp sugar

crushed ice

Prosecco to top up

2oz rum

Makes one drink

 

To make:

 

Put blueberries, mint leaves, sugar and lime juice in a glass.  Muddle the ingredients until the blueberries have released their juices.

 

 

 

 

 

Add crushed ice on top of the blueberry mixture and pour rum over.

Top with chilled Prosecco and garnish with extra mint and blueberries. (We put ours on to a cocktail stick and perched them on the glass!)
